Ingredients
2 lbs boneless skinless chicken thighs or breasts
1 cup full-fat Greek yogurt
1/4 cup harissa paste
3 tbsp olive oil
1/2 lemon (zest and juice)
3 cloves garlic (grated)
2 tsp ground cumin
2 tsp turmeric
2 tsp smoked paprika
1 tbsp kosher salt
Freshly cracked black pepper (to taste)
Instructions
Prepare the Marinade: In a medium bowl, mix together the Greek yogurt, olive oil, harissa paste, lemon zest, lemon juice, grated garlic, cumin, turmeric, smoked paprika, salt, and pepper until well combined.
Marinate the Chicken: Cut the chicken into large pieces if using skewers, add to marinade, and toss to coat. Cover and refrigerate for at least 3 hours or up to 25 hours.
Preheat the Grill: When ready to cook, remove the chicken from the marinade and thread onto skewers if using, without overcrowding.
Grill the Chicken: Preheat a grill or grill pan over medium-high heat, lightly brush with oil, and grill the chicken for about 13 to 15 minutes, turning occasionally.
Serve: Transfer the kebabs to a platter, season lightly with salt if desired, and serve warm.
Notes
Marinate longer for best flavor, and avoid overcrowding on skewers for even cooking.
