Roasted thinly sliced squash is a delightful way to enjoy one of autumn’s most versatile vegetables, highlighting its natural sweetness and tender texture.

Ingredients

  • 1 medium butternut squash (or acorn squash)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Optional: Fresh thyme, rosemary, or a sprinkle of cinnamon

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the squash by peeling and halving it, removing the seeds, and slicing into thin, even pieces (about 1/4 inch thick).
  3. Season the squash in a bowl with olive oil, salt, and pepper.
  4. Arrange the squash slices in a single layer on a baking sheet.
  5. Roast for 25-30 minutes, flipping halfway through, until tender and lightly caramelized.
  6. Serve cool for a couple of minutes before enjoying as a side or topping for salads.

Notes

For consistent cooking, ensure slices are uniform in thickness. Line baking sheets with parchment paper for easier cleanup.
