Ingredients
2 chicken breasts, boneless and skinless
Salt and pepper to taste
Olive oil for cooking
1 cup sun-dried tomatoes (in oil)
1 cup heavy cream
1 cup chicken broth
1 cup grated Parmesan cheese
8 oz cheese tortellini
Fresh basil for garnish
Instructions
Heat olive oil in a large pan over medium heat. Season the chicken breasts with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes per side. Remove from the pan and set aside.
Add the sun-dried tomatoes to the same pan and cook for 2 minutes, allowing them to release their flavors. Pour in the chicken broth and bring to a simmer.
Stir in the heavy cream and grated Parmesan cheese, mixing well until the sauce is creamy and smooth. Adjust seasonings if needed.
Cook the cheese tortellini according to package instructions. Once done, drain and add to the creamy sauce, stirring to combine.
Slice the cooked chicken and place it on top of the tortellini and sauce mixture. Garnish with fresh basil and additional Parmesan cheese before serving.
Notes
Avoid overcooking the chicken to keep it juicy, and consider using fresh herbs for added flavor.
